Formatting CV's is still a pain, just having some simple buttons for B/I/U - Margins - Centering - etc. would save so much time - even the normal shortcuts don't work (ctrl+B or command+B) so having the buttons will be great

Can I suggest you use the Word CV's rather than the PDF CV's? FileMaker is not a word processing tool so we are fairly limited in terms of the functionality we can offer you here, this is why we introduced the Work CV template docs.
By using Word CV templates you have all the formatting power of Word at your finger tips and can create templates using merge tags to pull in all the required data.
I do have a couple of pointers in regards to keyboard shortcuts though. To do bolding and italics etc you just need to use the usual shortcut but also add the shift key i.e. Command/control + Shift + B for bold. And the following for alignment;

I also don't like that when I put a letter into templates that it removed my bullet points and messes with my formatting.
